WHIPPED FETA WITH ROASTED TOMATOES

The perfect summer dish, bursting with flavor! It uses the simplest and freshest of ingredients and takes no time to throw together, making for a satisfying sharing platter at your table!

INGREDIENTS

Roasted Tomatoes:

  • 500g cherry tomatoes

  • Sprigs of thyme and rosemary

  • Head of garlic

  • Handful of garlic cloves

  • Sea salt, to taste

  • 1/2 cup to 1 cup of olive oil

Whipped Feta:

  • 400g feta cheese

  • 100g cream cheese

  • 2 tablespoons labaneh (or sour cream)

  • 2-3 tablespoons olive oil

PREPARATION

1. Preheat oven to 200C with fan on.

2. Place cherry tomatoes in a baking dish and place the head of garlic in the center, with the rest of the garlic cloves spread out. Drizzle with the olive oil, then place the herbs and season with sea salt.

3. Roast in oven for about 20-25 minutes, until the tomatoes and garlic are soft, caramelized and juicy.

4. In the meantime, break up the feta cheese block and place in a food processor with the cream cheese and labaneh (or sour cream), and mix really well. Add oil slowly while it is mixing, until you reach the desired texture. You want it to be smooth and creamy, and not liquidy, so add the oil sparingly and only as needed.

5. To assemble, place the whipped feta dip in a bowl, then add the roasted tomatoes on top, making sure to use the oils in the pan to drizzle all over.

6. Garnish with the sprigs, and serve with toasted bread.
