CHICKEN CAESAR SALAD

One of the my all-time favorite salads! With this classic chicken caesar salad, you get to make your very own, super easy caesar dressing!

INGREDIENTS

For Caesar Dressing:

  • 1 clove garlic, minced

  • 3/4 cup mayo

  • 1/2 cup yogurt

  • 1 tablespoon white vinegar

  • 1 teaspoon worcestershire sauce, optional

  • 2 teaspoons dijon mustard

  • 1/2 teaspoon mustard powder, optional

  • Pinch of salt and pepper

  • 1/2 cup shredded parmesan

  • juice of half a lemon

  • 2-3 tablespoons olive oil

For Salad:

  • 500g chicken strips

  • 1 tablespoon butter

  • 1 tablespoon vegetable oil

  • 1 head of lettuce, chopped

  • 1 cup of croutons

  • 1/2 cup parmesan shavings

PREPARATION

1. Mix all dressing components together in a food processor or using a whisk, aside from the olive oil.

2. While blending, begin adding the olive oil until you reach the desired consistency. Taste it, and add anything you feel is missing. Refrigerate until needed.

3. Add butter and vegetable oil into a hot pan, and grill the chicken strips on both sides until browned and cooked through.

4. In a large bowl, add the chopped lettuce, grilled chicken, croutons and parmesan shavings, and mix to combine.

5. Drizzle caesar dressing over the salad and toss to coat well. Then add more parmesan shavings and croutons to top, if desired.
