TOMATO NOODLE SOUP

Consisting of only 3 ingredients, this is the easiest shortcut recipe to making delicious tomato soup. 

INGREDIENTS

  • 1 pack chicken noodle soup

  • 100g tomato paste (about 1 small can)

  • 1 tablespoon of lemon juice

  • A handful of chopped parsley

PREPARATION

1. Add the chicken noodle soup and tomato paste in a pot over high heat and immediately pour 1 liter of boiling water over it, stirring until dissolved. 

2. Allow it to boil for about 10 minutes, until the noodles are fully cooked and the flavors are well combined.

3. Add 1 tablespoon of lemon juice (or as much as you prefer) and stir some more.

4. Finally, roughly chop a handful of fresh parsley over the top of the soup. 

5. Serve with bread or croutons. 

Notes:
You could alternatively use chicken stock or vegetable stock to make the soup, but I love the flavor of the chicken noodle soup, and the extra layer that the noodles add to the soup. 

You could also add cooked meatballs, allowing it to boil a few minutes longer so the flavors blend really well, enriching it even further.
