CHICKPEAS SALAD

Super easy salad, simply throw in all the veggies you like, add a few spices, seasoning and a basic dressing to take it to the next level, and you have yourself a healthy, protein-filled meal!

INGREDIENTS

For Dressing:

  • 1/4 cup olive oil

  • Juice of 1 lemon

  • 1 garlic clove, minced

  • Salt and pepper, to taste

  • 1 tablespoon of reserved chickpeas water

For Salad:

  • 1 can ready to eat chickpeas

  • 2 cups cherry tomatoes, halved

  • 3 cucumbers, chopped

  • 1/2 cup, Kalamata olives, chopped

  • 1/4 cup, chopped herbs (such as parsley or dill)

  • Crumbled feta cheese, to top

PREPARATION

1. Strain the chickpeas into a bowl, reserve the water and set aside.

2. Prepare the dressing by combining all the ingredients in a bowl, including a tablespoon of the reserved chickpeas water, and stir continuously with a whisk. Adjust seasoning as needed.

3. Prepare the rest of the salad ingredients in a large bowl and set aside.

4. Add the strained chickpeas to the dressing and mix to coat it well, then set aside for a few minutes allowing it to absorb all the flavor.

5. Stir in the chickpeas to the salad bowl, and toss really well.

6. Taste and adjust seasoning as required. Top with crumbled feta cheese and garnish with fresh parsley leaves.
