LAZY CAKE

 

Lazy Cake is the ultimate no-bake treat, rich, fudgy, and delightfully crunchy! It is a guaranteed crowd-pleaser that comes together in minutes and can be prepared in advance!

INGREDIENTS

  • 170g unsalted butter

  • 397g (1 can) sweetened condensed milk

  • 100g (1 cup) cocoa powder

  • 50g (1/2 cup) malt powder, (I use Holricks), optional

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 400g biscuits (I used digestives)

PREPARATION

1. Melt butter in a microwave safe bowl, then add the full can of condensed milk over it and whisk until smooth.

2. Sift the cocoa powder, malt powder and salt over the mixture and stir using a spatula until fully incorporated, then add the vanilla and mix again.

3. Break the biscuits into large chunks, using your hands, and add them to your chocolate mixture.

4. Mix really well, until all the biscuit pieces are covered in chocolate, and it looks well-combined.

5. Divide the mixture equally into two, and place each portion on a large piece of parchment paper, squeezing and rolling them into two logs.

6. Freeze them overnight, or at least 4 hours. Once firm, you can slice into them and enjoy.

7. Store any leftover in an airtight container in the refrigerator.

8. You can store the logs in your freezer for up to 2-3 months, so make as many as you want in advance for a quick treat!
