GUACAMOLE

There's nothing more delicious and refreshing than a side of guacamole. It's quick and incredibly easy to make!

INGREDIENTS

  • 2 ripe avocados

  • 1/2 red onion, diced

  • 1 small tomato, seeded and diced

  • Juice of 1 lime (if lime is not readily available, use 2 tablespoons of fresh lemon juice)

  • 1/4 cup finely chopped cilantro (coriander)

  • Salt to taste (sea-salt to top it with, if available)

  • A dash of freshly grated black pepper

PREPARATION

1. Cut the avocados in half, remove the seed and spoon out the flesh with a spoon. 

2. Using a fork, mash up the avocados in a bowl, until you reach preferred texture (traditionally, guacamole should be a little chunky).

3. Next, add the salt, lime (or lemon) juice. Taste as you add each ingredient, and adjust according to preference.

4. Then, add the cilantro and diced tomatoes to the bowl and mix to combine. 

5. Sprinkle with a dash of sea salt and freshly grated pepper if desired.

Notes:
You could also add some pomegranate seeds to the guacamole to give it a pop of flavor!

With guacamole, it really is all about personal taste. Feel free to take these ingredients, and experiment until you reach the perfect guacamole for you, be it more lime, less salt, more onions or no cilantro. It all works!
