EGG SALAD SANDWICH

Full of flavor, this egg salad sandwich is full of protein, covered in delicious rich and creamy sauce that will satisfy your every craving!

INGREDIENTS

  • 2 slices of bread

  • 4 large eggs, hard-boiled

  • 3 tablespoons light mayonnaise

  • 1 teaspoon lemon juice

  • 1/4 teaspoon Dijon mustard

  • 1 spring onion, thinly sliced

  • Salt and pepper, to taste

  • Lettuce

PREPARATION

1. Mash the eggs, using the back of a fork in a large mixing bowl, until they’re chunky, but not completely smooth. 

2. Add all other ingredients to the bowl, and season to taste with salt and pepper.

3. You may choose to toast the bread at this point.

4. Place a lettuce leaf on each slice of bread and pile up the egg salad on one slice, then cover with the other slice of bread. You want a nice thick filling of the egg salad.

5. Enjoy with a side of crisps!  

Notes:
You can add cheese and grill it until the cheese melts.

You can also add fresh tomato slices for extra flavor.

You can use any type of bread available to you to make the sandwich. 

Egg salad can be stored in the refrigerator, in an airtight container for up to 5 days.
