CHICKEN STROGANOFF

This is another one of my mom's recipes, and it is so easy to make! It is the epitome of comfort food, with its rich creamy sauce and earthy flavors. Served with a side of rice, pasta or whatever you have on hand, it is sure to satisfy your cravings.

INGREDIENTS

  • 500g chicken breast, diced or cut into strips

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 1 medium onion, chopped

  • 1 cup of mushrooms, sliced

  • 1 clove garlic, minced

  • 200ml heavy cream

  • 1/2 teaspoon nutmeg

  • 1 tablespoon flour

  • 1 tablespoon yellow mustard

  • Salt and pepper to taste

PREPARATION

1. Season the chicken with salt and pepper, and set aside.

2. In a large saucepan, heat the olive oil and butter over medium-high heat and sauté the onions until translucent, then remove from pan using a slotted spoon and set aside. 

3. Add mushrooms and minced garlic to the pan, cooking with the remaining oil and butter, until fragrant and mushrooms are lightly browned, about 3 minutes.

4. Then add the chicken, in portions, over the mushrooms to ensure they cook thoroughly. Season with nutmeg, salt and pepper and mix well.

5. Return onions to the pan, stirring in the flour and mustard and cooking until chicken is tender.

6. Add the heavy cream to the mix, stirring until well-combined, and reduce heat allowing the sauce to simmer and thicken.

7. Once it reaches the desired consistency, taste the sauce and adjust seasoning accordingly.

8. Top with chopped parsley or cracked black pepper and serve with a side of white rice or pasta or bread.
