GET WELL CHICKEN SOUP

This is the ultimate feel good recipe, and our go-to during flu season! It’s got magical healing powers, and is so easy to make that it will soothe and comfort you in no time.

INGREDIENTS

  • 500g chicken, bone-in, skin-on

  • 4 cups chicken broth

  • 1 tablespoon olive oil

  • 1 yellow onion, finely chopped

  • 1 carrot, chopped

  • 1 cup peas, frozen

  • 1 potato, chopped

  • 1/4 cup long grain rice

  • 1 cup of water

  • 1/4 cup lemon juice

  • 1 cup parsley, finely chopped

PREPARATION

1. In a large pot, prepare the broth and bring it to boil, then place the chicken in it and allow it to cook for about 30-40 minutes.

2. Now once the chicken is cooked through, you have two options. Option one is to take the chicken out of the broth and shred it into small pieces, throwing out the bones. Option two is to keep the chicken whole, in the broth.

3. In another large pot, heat the oil and add all the vegetables, except the potatoes, and cook over medium heat until softened and fragrant.

4. Season the vegetables with salt and pepper and add them to the pot of chicken broth, with the rice, potatoes and an additional cup of water and cover for 15-20 minutes until the rice and potatoes are cooked.

5. Once the rice and potatoes have cooked, add the lemon juice and parsley and give everything a good stir, so they soak up the flavors.

6. Check that the liquid volume is fine, because the rice will absorb a lot of liquid. If it needs more, add another 1/2 cup to 1 cup of water, based on your judgment.

7. Remove from heat, taste and season as needed, and serve with some toasted bread.
